The mother is very clued up and will protect the sac and babies once they have hatched, but sometimes due to unknown reasons the mother either destroy the sac or eats everything. You also don't want the babies to hatch in the enclosure as it is then very difficult to work with the little ones and they can most likely fit through the ventilation holes, so they might escape.

Every species has their own incubation time. Some species you would take the sac away between day 20 and 25 and some of the slower growing/bigger species you might only take away the sac somewhere between day 30 and 45. Spider eggs don't hatch out of the egg, but rather the egg grows a small body and 8 legs. At this stage they don't move around and can easily get stuck on other eggs or rotten eggs and that is why they must be moved/turned often. After a couple of weeks they molt for the first time and actually start looking like spiders, but they are still slow. When they molt the second time they look like an actual spider and start moving around. The ideal time for you to take away the sac is right after the first molt or just before the second molt, just before they start moving around as that is the time they will start exploring outside the egg sac. However the speed of the first and second molt will depend on your temp and humidity and without being able to see inside the egg sac it is difficult to know exactly. Most breeders take the sac away before the first molt so that they can open the sac and remove any unfertilised/rotten eggs to prevent any getting stuck. So no need to turn them as long as you take the eggs out of the sac.
